1 can artichokes or artichoke hearts, drained and rinsed
1 stalk celery, sliced thinly
2 tomatoes, chopped
1/4 cup sliced black olives
1 green onion, minced
1 tbsp snipped oregano and parsley
1 tbsp toasted pine nuts

Vinaigrette
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp grated lemon peel, pepper and Salt and pepper, to taste

Garnish: Shredded spinach and crumbled feta cheese

Place salad ingredients in a bowl. Mix ingredients for vinaigrette until well combined and pour over salad, gently mixing. Spoon salad onto spinach lined platter and garnish with cheese. Serves 4
