1 cup thinly sliced yellow squash
1 cup thinly sliced zucchini
1 cup thinly sliced red and yellow peppers
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp coarse sea salt
1/2 tbsp garlic powder
1/2 tsp ground cayenne pepper
Cooking Spray
Preheat oven to 450. Combine first 8 ingredients in a large, zip-top plastic bag. Seal bag; shake to coat squash. Place squash on baking sheet coated with cooking spray. Bake for 20 minutes; turning after 10 minutes.
