FRESH TOMATO SALAD WITH BASIL, TARRAGON AND SWEET ONION

Dressing
1 tsp Dijon mustard
1 tbsp balsamic vinegar
Juice of 1 lime
2 clove garlic, finely minced
1/4 cup olive oil
1/3 cup fresh basil and tarragon, chiffonade

Salad
4 medium tomatoes, cored and cut into 1/2 inch thickness
1 large sweet onion, cut into 1/4 inch thickness and rings separated
4 basil leaves, garnish
Salt and pepper, to taste

In a mixing bowl, whisk ingredients up to olive oil. Slowly mix in the oil and whisk until well blended. Add herbs.

On four separate serving plates, fan the tomatoes around the plate. Sprinkle with salt and pepper. Place onion rings in dressing and toss. Put onions over tomatoes. Garnish with basil. Serves 4
