2 tbsp (1 oz) butter
3 cups (12 oz) Sharp Cheddar, shredded
1 tsp dry mustard
1 tsp hot pepper sauce
1 tsp Worcestershire sauce
2 egg yolks, lightly beaten
1/2 cup scotch ale

Melt butter over hot water bath. Add Cheddar slowly, stirring in one direction. Add mustard and next two ingredients; continue stirring.

Whisk egg yolks and beer together; whisk into cheese mixture in small amounts. Reduce heat and continue stirring until sauce thickens; reserve.
