GERMAN STYLE HASH BROWNS

5 large Idaho potatoes
Vegetable oil
1 1/2 cups chopped onion
1/2 tsp paprika
1/4 tsp salt
6 tbsp butter
Salt, garlic powder, and pepper, to taste

Peel and slice potatoes into 1/2 inch strips. Place strips in a bowl of cold water as they are cut. Pat the potatoes dry. Pour 3/4 inch oil into a large skillet or a deep fryer. Heat oil until it nears boiling point. Divide the potatoes into 3 batches and fry each batch separately. Each batch should take about 10-12 minutes. Let strips drain on paper towels.

When potatoes or cool, cut the strips into 1/4 inch cubes. In a heave skillet, heat 2 tbsp oil. When oil starts to sizzle add the chopped onions and salt and paprika. Saute until the onions start to brown and soften. Set aside.

Preheat oven to 400. Heat an oven-proof skillet and melt butter. Add potatoes and onions. Mix ingredients together until browned and then season with salt, garlic powder, and pepper, to taste. Place pan into the oven for about 10-15 minutes or until crisp.
