2 cups grated cheddar cheese, room temperature
4 oz softened cream cheese
1/4 cup chopped parsley
2 tbsp minced onion and green bell pepper
1 tsp dry dill
2 tsp Dijon mustard
Pinch cayenne or squirt hot pepper sauce

By hand, mix ingredients thoroughly. Taste and make adjustments to seasoning as desired. Refrigerate at least 1 hour before serving. Allow to come to room temperature and mold or make a log and cover with chopped nuts. Serve with crackers.
