3 cups sugar
1 1/2 cups unsalted butter
5 eggs
3 cups unsifted flour
1/4 tsp salt
5 oz can evaporated milk plus water to make 1 cup
2 tsp vanilla extract
Grated zest of 1 lemon
1/2 tsp lemon extract

Glaze
3/4 cup orange juice
1 cup sugar
1 tsp butter

Beat the sugar and butter in a large bowl until light and fluffy, about 5 minutes. Beat in eggs, one at a time; beat well after each addition. Mix flour and salt. Alternately add the flour and milk to the large bowl, ending with flour. Fold in the extract and rind. Pour into a grease 10 inch tub pan and bake, starting in a cold oven, at 325 for 1 hour 45 minutes or until done. Do not open the oven door while the cake is baking.

Glaze: Put in ingredients in a saucepan and bring to a boil; boil until it is syrupy, about 45-55 minutes. Then pour the glaze over the warm cake slowly, so it seeps in.
