5 tsp olive oil
3/4 lb sweet Italian turkey sausage, cut into 1/2-inch pieces
5 garlic cloves, minced
1-1/2 tbsp mild chili powder
3/4 tsp oregano
2 medium red onions, diced
1/2 cup water
3 green bell peppers, diced
3 cans (14-1/2 oz each) spicy diced tomatoes
1 tsp salt
16 oz radiatore

In a large Dutch oven, heat the oil over medium heat. Add the turkey sausage and cook until browned all over, about 5 minutes. With a slotted spoon, transfer the sausage to a plate. Add the garlic, chili powder and oregano to the pan, and cook, stirring constantly, until fragrant, about 1 minute.

Add the onions and stir to coat with the spices. Add the water, increase the heat to medium-high and cook, stirring occasionally, until the onion has softened, about 5 minutes. Stir in the bell peppers, cover and cook until crisp-tender, about 4 minutes. Stir in the tomatoes and salt. Bring to a boil, reduce to a simmer and cook, uncovered, while you cook the pasta. Five minutes before the pasta is done, return the sausage to the pan.

Meanwhile, in a large pot of boiling water, cook the pasta according to pkg directions. Drain well, add to the sausage and pepper mixture and toss to combine.
