1 1/2 cups packed brown sugar
2/3 cup shortening
2 1/2 tbsp instant coffee dissolved in 2 tbsp cold water
1 tsp vanilla
1/2 tsp almond extract
2 eggs
1 1/2 cups flour
1/3 cup cocoa
1/2 tsp salt
1/4 tsp baking soda
1 cup miniature semi-sweet chocolate chips
Coffee glaze
1 cup confectioners sugar
1 tbsp instant coffee dissolved in 2 tbsp cold water
Preheat oven to 350. Grease a 13x9 inch baking pan with shortening. Bars: Combine first 5 ingredients in a bowl until creamed. Add eggs, 1 at a time. Combine dry ingredients and mix into creamed mixture just until blended. Stir in chips and almonds. Spread into prepared pan and bake 30-35 minutes or until set. DO NOT OVERBAKE. Cool completely on a wire rack. Cut into bars.
Glaze: Combine ingredients and stir until well blended. Add additional coffee if mixture is too thick. Drizzle over cooled bars.
