CAJUN CREAM SAUCE OVER ANGEL HAIR PASTA

1 tbsp olive oil
1/2 cup small diced tasso sausage
2 tbsp minced shallots
1 lb crawfish tails
1 tbsp minced garlic
1/2 cup Italian plum tomatoes, peeled, seeded and chopped
1/2 cup chopped green onions
1 1/2 cups heavy cream
2 tbsp butter
1 lb angel hair pasta, cooked al dente
1/2 cup parmesan cheese
2 tbsp chopped chives
Salt and pepper

In a large pan, saute sausage in olive oil for 2 minutes. Add shallots and crawfish; sauté for 1 minute. Stir in garlic tomatoes and green onions; saute 1 minute. Season the mixture with salt and pepper. Add the cream and bring up to a boil. Reduce the heat to a simmer and cook for 4-6 minutes or until the sauce has reduced enough to coate the back of a spoon. Season sauce with salt and pepper. Stir butter into the sauce. Add the pasta to the pan and gently toss the pasta into the sauce. Garnish with grated cheese and chives.
