1 tbsp olive oil
1 cup chopped onions
2 cloves garlic, chopped
1 small yellow squash and zucchini, diced
6 plum tomatoes, chopped
1 tbsp dried oregano
1 1/2 tsp dried oregano
1 tsp kosher salt
1/4 tsp pepper
4 cups cooked rotini pasta (3 cups dried)
1 cup ricotta cheese
1 slice bread, cut into small cubes

Preheat oven to 350. Heat oil in a sauté pan and cook onions and garlic until they begin to change color and soften, about 5 minutes. Stir in the squash, zucchini and tomatoes; cover. Cook until wilted, about 5 minutes more.

Stir in the herbs, salt and pepper. Toss in the pasta and ricotta cheese. Put mixture into a 2-3 quart casserole. Top with cubed bread and dust with parmesan cheese. Bake 25-35 minutes, until the bread is toasted and the casserole is hot throughout. Serves 4
