1 cup sugar
1/4 cup flour
1/8 tsp salt
2 tbsp butter, melted
Juice and grated zest of 2 lemons
3 eggs, separated
1 1/2 cups milk

Preheat the oven to 350. Grease a 1 1/2-quart souffle dish.

In a large mixing bowl, combine the sugar, flour, and salt and mix well. Add the butter, lemon juice, and lemon zest. Blend with a whisk. Add the egg yolks and milk and beat until light.

In a separate bowl, beat the egg whites until stiff. Fold into the lemon mixture. Pour into the souffle dish. Set the souffle dish in a large pan and place in the oven. Fill the pan with hot water. Bake for 1 hour. Serve immediately. Serves 4-6
