1 onion, chopped
1/4 cup butter
1 (14.5 oz) can chicken broth
6 potatoes, peeled and cubed
1 lb smoked sausage, sliced
12 oz dark beer
1/4 lb cheddar cheese, shredded
1/4 block of Velveeta, cubed
1/4 cup white wine
3 cups water
1 tsp salt
Pepper
1 cup half and half

In a soup pan, saute onions in butter. Add chicken broth and potatoes cooking until they start to get tender. Add onions, wine, salt, and sausage. Simmer until potatoes are completely tender. Add remaining ingredients and stir until the cheese melts. Taste for additional cheese if needed. Simmer until the soup thickens.
