2 (8 oz) tubs whipped cream cheese
4 tbsp prepared horseradish
Several grinds of black pepper
1 cup small diced red and yellow bell pepper
1/4 cup finely diced red onion
3/4 lb deli sliced roast beef
Lettuce leafs

In a large bowl, mix ingredients except roast beef until thoroughly blended. Lay out a slice of roast beef and lettuce leaves. Spread an even layer of the cream cheese mixture on it. Roll up and repeat with remaining beef.

Refrigerate the roll-ups until ready to serve. Wrap roll-ups with lettuce and slice into halves or thirds before serving.
