4 oz rock shrimp
1/4 cup red onion, diced small
1/4 cup red and green bell pepper, diced
1/4 cup Roma tomatoes, seeded and diced small
1 tbsp fresh chopped basil and oregano, chopped
Salt and pepper, to taste
1/4 cup roasted garlic butter
1/4 cup fresh mozzarella, diced small
1 1/2 slices sourdough or rustic Italian bread

To make crostini, lightly brush bread with olive oil and grill or broil until golden brown. Saute vegetables and herbs in a lightly oiled pan for approximately 30 seconds. Add shrimp and roasted garlic butter and continue cooking for about another minute. Toss with cheese and place mixture on top of bread.
