GRATED POTATO AND CHEESE CASSEROLE

2 large onions, sliced
2 clove garlic, minced
2 tbsp butter
2 lbs potatoes
1 1/2 cups grated cheddar cheese
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
1 1/2 cups milk
1/2 cup whipping cream
2 tbsp chopped parsley

Cook onions and garlic in butter in a skillet until tender and browned, about 5 minutes. Peel potatoes and grate into shreds. Rinse shreds and squeeze the water out of them. Combine with onion and garlic, cheese, seasonings. Add remaining ingredients and place mixture into a butter baking dish. Bake, uncovered, at 400 for 1 to 1 1/4 hours.
