1 garlic clove
3 tbsp olive oil
8 slices best end of beef
1 lb 2 oz ripe diced tomatoes
Oregano, salt and pepper, to taste
1/2 cup dry white wine

Heat oil and garlic in a pan and when it is hot, sear the meat on both sides. When golden brown, set aside and add tomatoes in pan, with seasonings. Reduce the sauce. Put the meat back into the pan and add the wine. Raise the heat to evaporate the wine for 1-2 minutes. Serve hot. Serves 4
