3 eggs, beaten
1 1/2 cups sugar
3/4 cup oil
1 tsp lemon extract
2 cups grated zucchini
3 cups flour
1/4 tsp salt and baking powder
1 tsp baking soda
1 1/2 tsp poppy seeds

Combine first 4 ingredients in a bowl and mix well. Add zucchini and mix well. Combine dry ingredients and mix until just moistened. Put into greased muffing pans or loaf pan. Bake 45-50 minutes for bread and 15 minutes for muffins.
