1 (2 – 3 lb) boneless pork loin roast
2/3 cup maple syrup
3 tbsp Dijon-style mustard
2 tbsp cider vinegar and soy sauce
Salt and pepper
Place pork on a foil-lined shallow roasting pan. Combine remaining ingredients and rub mixture over roast. Bake at 350 for 1 1/4 hours, (about 30 minutes per pound) until internal temperature is 155 degrees F. Remove from oven and cover loosely with foil. Let rest for 10 - 15 minutes or until internal temperature reaches 160 degrees F. before slicing to serve. Note: Vegetables of choice (carrots, potatoes, Brussels sprouts, winter squash wedges or sweet potatoes) are good cooked along with it.
