LEMON ROSEMARY ROASTED PORK LOIN

1 (3 – 3 1/2 lb) boneless pork loin roast
1 tbsp lemon peel
2 tsp dried rosemary leaves
1/2 tsp dried thyme, black pepper and salt
4 cloves garlic, finely chopped

Preheat oven to 350. Place pork on a foil-lined shallow roasting pan. Combine remaining ingredients and rub mixture over roast. Bake for 1 hour (20-25 minutes per pound). Remove from oven and cover loosely with foil. Let rest for 10 - 15 minutes or until internal temperature reaches 160 degrees. before slicing to serve.
