CASSOULETTE OF VIDALIA ONIONS WITH GARLIC POTATOES

Category: Hash Brown Potatoes/Casseroles

Saute 2 cups chopped Vidalia onions until soft and transparent.

1/4 c extra virgin olive oil
2 cloves finely chopped garlic

Add to onions and saute one minute.

4 cups cubed red potatoes

Add potatoes and enough heavy heavy cream heavy to cover. Simmer until potatoes are tender and cream has thickened

Can be prepared ahead and refrigerated up to this point Divide into individual copper pots or ramekins and top with grated gruyere cheese.

Place under broiler and heat until bubbly and cheese has lightly browned.
