2 large onions
4 tbsp unsalted butter
1/4 cup vegetable oil
1/4 tsp ground cayenne pepper
1 tsp kosher salt
1/2 tsp pepper
4 oz cream cheese, softened
1/2 cup sour cream and mayonnaise
Cut the onions in half and slice into 1/8 inch thick half-rounds. Heat the butter and oil in a skillet and add onions, cayenne, salt and pepper. Saute for 10 minutes. Reduce heat to medium-low and cook, stirring occasionally, for 10 more minutes until the onions are browned and caramelized. Allow the onions to cool.
Beat the remaining ingredients until smooth. Add the onions and mix well. Taste for additional seasonings. Serve at room temperature.
