1/2 cup chopped onion
1/4 cup butter
2 tbsp flour
1 (1 lb) can salmon, drained reserving liquid
1 3/4 cups milk
1/2 tsp salt
1/8 tsp paprika
1 tbsp lemon juice
1/4 cup minced parsley
5 oz elbow macaroni, cooked and drained
2 cups shredded cheddar cheese

Preheat oven to 375. Cook and stir onion in butter until tender. Remove from heat. Blend in flour. Cook over low heat, stirring until mixture is bubbly. Remove from heat.

Stir in reserved liquid from salmon and the milk. Heat until boiling, stirring constantly. Boil 1 minute. Remove from heat. Stir in seasonings and lemon juice.

Break salmon into bite-size pieces. Layer macaroni, salmon, 3/4 of the cheese in a casserole. Pour sauce over layers and sprinkle with remaining cheese. Bake, uncovered 20-25 minutes or until sauce is bubbly. Serves 6-8
