ISLAND SEAFOOD SAUTE

1/3 cup olive oil
1 lb firm fish, such a cod, scrod, grouper or snapper, cut into chunks
1/2 lb fresh mushrooms, thinly sliced
1 red bell pepper, cut into strips
1/2 cup thinly sliced celery and sliced scallions
1 clove garlic, minced
1 (8 oz) can sliced water chestnuts, drained
1/2 cup coconut rum liqueur
2 tbsp soy sauce
1 tbsp cornstarch

In a large skillet, heat oil and saute fish on all sides until it is cooked and flaky, about 3 minutes. Remove and set aside. In same skillet, stir fry next6 ingredients about 3 minutes or until vegetables are crisp tender.

In a small bowl, mix remaining ingredients and add to vegetables, stirring constantly, until mixture thickens. Return fish to skillet and mix gently into vegetables. Cook just long enough to heat fish.
