1 tbsp olive oil
1 large sweet onion, thinly sliced
1 lb. shaved deli roast beef
1/4 tsp freshly ground pepper
4 (6- to 8 inch) hoagie rolls, split
1/4 cup prepared horseradish, if desired
8 slices provolone cheese

Heat broiler. Heat oil in large nonstick skillet over medium-high heat until hot. Add onion; cook 12 to 15 minutes or until soft and golden brown. Stir in beef and pepper; cook until heated through. Reduce heat to low to keep warm.

Meanwhile, place rolls, cut side up, on baking sheet. Broil 4 to 6 inches from heat 1 minute or until golden brown. (Watch carefully so rolls do not burn.) Spread top halves of rolls with horseradish. Line bottom halves with cheese; top with beef and onion mixture.* Drizzle with any pan juices.

TIP *The heat of the rolls and meat will soften the cheese. If you want really melted cheese, place halves of rolls with cheese under the broiler for a few seconds to melt the cheese before adding beef and onion mixture. 4 sandwiches
