1 (4 lb) pork loin
2 cloves
1 onion
2 cups beer
1 bay leaf
2 tsp salt
1/2 tsp pepper
3 egg yolks, beaten
2 cups bread crumbs

Trim excess fat from pork. Stick cloves in onion and put in a large pan with beer, bay leaf, salt and pepper. Bring to a boil and add pork. Cover and simmer over low heat for 1 1/2 hours. Turn pork in beer mixture 2-3 times. Drain and reserve stock. Cool 30 minutes.

Preheat oven to 400. Brush pork with egg yolks. Coat heavily with bread crumbs. Place in a shallow pan and bake for 30 minutes, basting frequently with beer stock.
