PEANUT BUTTER CHEESECAKE I

Crust
1 1/4 cups graham cracker crumbs
1/4 cup sugar and butter, melted

Peanut Butter Mixture
1/2 cup peanut butter
2/3 cup confectioners sugar
1/4 cup packed brown sugar

Cheese filling
2 (8 oz) pkg cream cheese, softened
1 cups sugar
2 tbsp lemon juice and vanilla extract
2 large eggs

Crust: Mix together and press into a 9 inch pie pan. Bake at 325 for 8 minutes. Make peanut butter mixture by cutting confectioners sugar with peanut butter until balls form. Cut in brown sugar and pour over crust. Save 2 tbsp for garnish. Cheese filling: Mix until well combined. Beat 5 minutes and pour over peanut butter mixture. Garnish with reserved peanut butter mixture. Bake at 350 for approximately 35 minutes. Cool 3 hours.
