1/4 cup butter
1/2 cup chopped scallions
1 medium-sized red or green bell pepper, chopped
1 (10 oz) pkg frozen baby lima beans, thawed
1 (10 oz) pkg frozen corn kernels, thawed
1/2 cup water
1/2 tsp onion powder and pepper
1/4 tsp salt
In a large skillet, melt the butter over medium heat. Saute the scallions and red pepper until soft, about 5 minutes. Reduce the heat to medium-low and add the remaining ingredients, stirring to blend. Cook for 15 to 20 minutes, or until the vegetables are tender and the liquid is absorbed. Serves 4
