1 lb medium mushrooms (about 3 dozen)
3 tbsp butter
1/4 cup finely chopped green pepper and onion
1 1/2 cups soft bread crumbs
1/2 tsp salt and thyme
1/4 tsp turmeric
1/4 tsp pepper
1 tbsp butter

Heat the oven to 350. Wash, trim, and dry the mushrooms thoroughly. Remove the stems. Finely chop enough stems to measure 1/3 cup. Melt the 3 tbsp of butter in a skillet.

Cook and stir the chopped mushroom stems, green pepper, and onion in the butter for about 5 minutes or until tender. Remove from heat and stir in the remaining ingredients except the mushroom caps and the 1 tbsp of butter.

Melt the tbsp of butter in a shallow baking dish. Fill the mushroom caps with the stuffing mixture. Place the mushrooms filled side up in the baking dish. Bake for 15 minutes. Set the oven control at broil and/or 550 F. Broil the mushrooms 3 to 4 inches from the heat for 2 minutes.
