1 tsp vanilla extract
2 tsp vegetable oil
1/4 cup water
3/4 tsp salt
1 cup sugar
2 1/2 cups pecans
1 tsp cinnamon

Preheat oven to 300. Combine oil and pecans in a flat baking sheet and roast in oven for 20-25 minutes stirring frequently. Combine rest of ingredients not including vanilla and cook in saucepan over medium heat until sugar is dissolved. Boil to 235 degrees using a candy thermometer. Remove from heat and blend in vanilla. Add pecans and stir until mixture is creamy. Lay individual pecans out on wax paper to cool.
