1 lb twist pasta
3 medium tomatoes, seeded and diced
1 pkg (8 oz) Cheddar cheese, cubed
1 pkg (8 oz) mozzarella cheese, cubed
6 scallions, thinly sliced
1 pkg (3 oz) sliced pepperoni
3/4 cup vegetable oil
1/2 cup red wine vinegar
1/3 cup grated Parmesan cheese
2 tsp dried oregano
1 tsp garlic powder
1 tsp salt
1/4 tsp black pepper

Prepare the pasta according to the pkg directions; drain, rinse, and drain again. Place in a large bowl and allow to cool. Add the tomatoes, Cheddar and mozzarella cheeses, scallions, and pepperoni to the pasta; toss until well combined.

In a medium bowl, combine the oil, vinegar, Parmesan cheese, oregano, garlic powder, salt, and pepper; mix well. Pour the dressing mixture over the pasta mixture and toss until evenly coated. Cover and chill for at least 2 hours before serving.
