Noodle Squares:
3/4 lb (about 6 cups) uncooked wide noodles
4 eggs, slightly beaten
2 cups milk
1 1/2 tsp salt
1/4 tsp white pepper

Sauce:
1 lb mild Italian sausage
1/2 cup chopped onion and green pepper
3 tbsp flour
1 (14 oz) bottle catsup
1 1/4 cups light cream or half-and-half
1 tsp oregano
3/4 cup grated Parmesan cheese

Noodle Squares: Cook noodles according to pkg directions; drain. Combine eggs, milk, salt and pepper. Add noodles and toss. Turn into a 13x9 inch buttered baking dish. Cover. Bake at 350 for 25 to 30 minutes, or until a knife inserted near center comes out clean.

Sauce: If using link sausage, remove casings. In a skillet, cook sausage, breaking up meat with a fork into small chunks. Pour off meat drippings, reserving 2 tbsp of fat. Set meat aside. Return meat drippings to skillet. Add onion and green pepper; cook until tender. Stir in flour. Remove from heat; stir in catsup and oregano. Gradually stir in cream. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Reduce heat; stir in cheese and sausage, allowing to heat through.

Cut noodles into squares. Serve sauce over noodle squares.
