6 tbsp butter
1 tbsp finely diced shallots
1/2 cup finely diced lobster, shrimp and mushrooms
1/2 cup wine
1 tbsp flour
4 sole fillets
3/4 cup Hollandaise sauce

Melt 2 tbsp butter in a medium saucepan and saute shallots until translucent. Add next 4 ingredients and simmer until seafood is cooked, about 4-5 minutes. Strain off liquid and reserve; set seafood aside.

Melt 1 tbsp butter and sprinkle with flour to make a roux. Add reserved liquid and cook until thickened. Add some of the sauce to the seafood mixture (just enough to bind), mix remaining sauce with the hollandaise; set aside.

Melt remaining butter and saute fillets until cooked. Lay cooked fillets flat on a cookie sheet, top with seafood and spoon hollandaise sauce mixture over top. Bring until sauce is golden.
