SPITFIRE SHRIMP

Seasoning
1 lime, juiced
1/8 cup hot sauce
1 tbsp. ground cumin
1/4 tsp crushed red pepper flakes
1 tbsp. crab boil seasoning

Shrimp
4 cloves garlic, crushed and chopped
2 shallots, chopped
1 tbsp. olive oil
2 tbsp. butter, cut into pieces
2 lb jumbo shrimp, peeled and deveined
12-15 blades fresh chives, chopped, for garnish

Combine seasoning ingredients and set aside. In a skillet, add olive oil and butter. When butter has melted, add garlic and shallots and saute for 1 minute. Add shrimp and cook 3 minutes, tossing and turning frequently. Dump cooked shrimp into seasoning mixture and toss to coat shrimp evenly. Garnish with chopped chives. Serve warm or chilled.
