Boneless, skinless chicken breasts, pounded to 1/4 inch thickness
Crumbled feta cheese
Pine nuts, toasted to crispiness
Sundried tomatoes packed in oil, sliced or julienne
Fresh chopped garlic
Fresh grated parmesan cheese
Fresh basil
Olive oil

Preheat oven to 350. Drizzle enough olive oil in the bottom of a casserole dish to lightly coat the bottom. Sprinkle with chopped garlic.

Into each chicken breast, add a handful of feta cheese, some pinenuts, sliced sundried tomatoes and some basil. Roll chicken up and place seam-side down into prepared dish.

After pan is full, lightly sprinkle all with pepper on tops. Drizzle with a little more olive oil from the sundried tomato jar. Sprinkle with more chopped garlic, parmesan cheese and pine nuts. Bake until finished, about 45 minutes.
