2 beaten eggs
1/2 cup tomato juice
1/4 cup soft bread crumbs
2 tbsp. parsley
1/2 tsp oregano
1/4 tsp each salt and pepper
2 cloves garlic, crushed
2 lbs. ground beef
4-6 oz thin slices ham
6 oz mozzarella cheese
In a bowl, combine eggs and tomato juice. Stir in next 6 ingredients and mix well. Add beef and combine. On wax paper or foil, pat mixture into a rectangle. Arrange ham on top and leave a small margin around edge. Spread cheese on top. Roll from short end like a jelly-roll using paper or foil to roll. Place in bottom of pan with seam down. Bake at 350 for 1 hour and 15 minutes.
