Beer Lovers' BBQ Sauce

- 1 tablespoon olive oil
- 1 onion, very finely minced
- 1 teaspoon minced garlic
- 1 green bell pepper, seeded and finely minced
- 30 ounces beer
- 1 cup brown sugar
- 1 cup tomato paste
- salt and pepper, to taste
- hot pepper sauce, to taste
Heat the oil in a saucepan over medium-high heat. Add the onion, garlic, and bell pepper. Cook, stirring frequently, until soft. Reduce the heat to medium and slowly add the beer while stirring. Stir in the brown sugar and tomato sauce and mix well. Let the mixture come to a simmer and cook, stirring occasionally, for 30 minutes. Season to taste with salt, pepper, and hot sauce. Use immediately, or place in a covered container in the refrigerator. The sauce will keep for up to 1 week. Use as a basting sauce on chicken, pork, beef, etc. while grilling.
