Mexican Brown Rice

Ready in: 1-2 hrs
- 1 can (12 ounce size) chopped tomatoes, keep the juice
- 1 cup uncooked brown rice
- 1 cup corn
- 1 1/2 cup water
- 2 tablespoons olive oil
- 1/2 package taco seasoning mix
- 2 teaspoons fruit sugar
- 1 onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Add the water to a large pot and bring to a boil. Add all the ingredients, except the corn. Reduce to a simmer, cover and cook until water has been absorbed into rice. Stir in the corn. Average cooking time is 60 minutes. Let stand for 10 minutes and fluff with fork.
