  • 1/2 cup butter
  • 4 boneless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/3 cup lemon juice
  • 1 tablespoon dried minced onion
  • 1 clove garlic, minced
  • salt and pepper, as desired

Preheat the oven to 375 degrees F. Place the butter in a baking pan and place the pan in the oven to melt.

Place the chicken breasts between sheets of waxed paper. Pound the chicken to an even thickness using a meat mallet.

Dredge the flattened chicken breasts in the flour. When the butter is melted, remove the pan from the oven and place the chicken in the pan, turning to coat it with the melted butter on all sides.

Return the pan to the oven and bake for 30 minutes at 375 degrees F, basting occasionally with the melted butter.

Combine the lemon juice, onion, garlic, salt, and pepper in a small bowl. Remove the chicken from the oven and brush with the lemon mixture. Return the lemon chicken to the oven and bake for 30 minutes longer or until the chicken is cooked, basting after 15 minutes.
