Marinade - Pork Brine II

3 Tbsp coarse salt
3 Tbsp brown sugar, packed
1 tsp peppercorns
8 sprigs thyme, fresh
1/2 onion, chopped
4 garlic cloves, smashed
2 cups water
3 cups ice


1. Add the salt, pepper, sugar and thyme, garlic, onion and water to a medium sauce pot.
2. Bring the pot to a boil over high heat. Cook until salt and sugar are completely dissolved.
3. Stir in ice until melted.
4. Transfer the brine to a container and chill until it is ready to be used. Brine chops by submerging in the mixture for 12-48 hours. Before cooking, be sure to rinse the chops after removing from the brine.
