2 cups cooked chicken, shredded
1/2 sleeve saltine crackers, crushed
1/3 cup mayonnaise
4 green onions, finely chopped
2 Tbsp lemon juice
1/4 tsp pepper
2 Tbsp vegetable oil


1. In a bowl, combine the chicken, cracker crumbs, mayonnaise, onions, lemon juice and pepper. Shape into six patties.
2. Heat oil in large skillet; fry patties over medium heat for 3-5 minutes on each side or until golden brown.
