1 lb ground beef
1 (16 oz) can whole kernel corn, undrained
1 (16 oz) jar pace picante sauce
½ cup shredded cheddar cheese (about 2 oz)
1 (about 8 oz) box corn muffin mix



1. Heat oven to 375 degrees. Cook the beef in a large skillet over medium-high heat until it’s well browned. Stirring often to separate meat. Drain grease.
2. Stir the corn with its liquid, picante sauce and cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Prepare the corn muffin mix according to the package directions. Using 2 spoons drop the batter evenly on top of the beef mixture.
3. Bake for 25-30 minutes or until the corn muffin topping is golden brown.
