Baked Stuffed Green Peppers

- 6 medium green bell peppers
- 1 pound ground beef
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (8 ounce size) tomato sauce
- 1 cup soft bread crumbs
- 1 cup grated cheese
Preheat the oven to 350 degrees F. Bring a large pot of water to a boil over medium-high heat. Slice the tops off the bell peppers and remove the seeds. Place the peppers in the boiling water and cook for 5 minutes or until slightly soft. Remove with a slotted spoon and let drain. Heat a skillet over medium-high heat. Add the ground beef and onion and cook, stirring frequently, until the beef is no longer pink. If desired you can remove the stem from the top slice of the bell peppers and chop the flesh and add to the skillet with the onion. Drain off any excess grease. Stir in the salt, pepper, tomato sauce, and bread crumbs. Fill the peppers with the ground beef mixture and place upright in a baking dish. Add a little water to the bottom of the dish. Top the peppers with the grated cheese. Place in the oven and bake at 350 degrees F for 40 minutes or until the peppers are soft and the cheese is melted. Serve the baked stuffed green peppers hot.
