Serves/Makes: 1 gallon
Ready in: > 5 hrs
- 1 teaspoon dry active yeast
- 1 cup lukewarm water, plus more to fill container
- 2 cups granulated sugar
- 2 tablespoons root beer extract
- 1/4 cup raisins
Combine the yeast and warm water in a bowl. Let stand for 5 minutes. In another bowl or large measuring cup, combine the sugar and root beer extract and mix well. Add the yeast and water to the sugar mixture and mix to start to dissolve the sugar. Transfer the yeast mixture to a 1-gallon jug or pitcher with lid. Add enough lukewarm water to fill the container 1-inch from the top. Add the raisins. Gently shake the jug to mix the ingredients (the sugar won't dissolve completely at this point). Cover the container and place it in direct sunlight or other very warm area for 3 hours. Move the container to the refrigerator after 3 hours and chill overnight (for at least 8 hours or up to 2 days). The root beer can be consumed the next day. Strain out the raisins when pouring the root beer. Recipe Source: Adapted from "The Amish and Mennonite Kitchens Cookbook"
