Organic "Sugar" Pumpkin Pie
Ingredients:
1 ½ cup fresh cooked organic sugar pumpkin mashed
(*see tip below for cooking fresh pumpkin)
¾ cup sugar
2 eggs and 2 egg yolks
¾ cup heavy whipping cream
1 teaspoon cinnamon
½ teaspoon each of ginger, nutmeg and salt
¼ teaspoon each of cloves and allspice
Instructions:
In large mixing bowl beat eggs and egg yolks well. Add heavy whipping cream and blend well.
In another bowl combine mashed pumpkin, sugar and spices; mix together well.
Pour pumpkin mixture into egg/cream mixture; stir well.
Pour pie mixture into a 9 inch deep dish pie crust.
Bake at 350 degrees for 1 hour 15 minutes.
*Fresh pumpkin cooking tips:
Use organic cooking or “sugar” pumpkins. Cut them up in quarters and steam them using any vegetable type steamer or you can bake them in oven until tender (about ½ hour -at- 350). If these are very easily poked with fork then they are ready. Once cooled simply scrape off the seeds including stringy inside part and discard. Then scoop out the flesh into a large bowl and mash with potato masher. Extra mashed pumpkin freezes for several months.

I should have mentioned I also use organic sugar, eggs and cream. And grind my own fresh nutmeg.
