  • 4 pounds chicken pieces, bone-in, skin-on
  • 1/2 cup honey
  • 1/4 cup light soy sauce
  • 1/4 cup dark soy sauce
  • 5 cloves garlic, run through a press
  • 1/4 cup chopped fresh ginger
  • coarse salt
  • white pepper

Season chicken pieces with salt and pepper to taste, and arrange in a shallow glass baking dish.

Heat honey, soy sauces, garlic and ginger over medium-low heat to melt honey and combine flavors. Remove from heat and cool slightly. Pour over chicken pieces, turning to coat. Cover with foil and marinate in refrigerator for at least one hour, up to overnight.

Remove chicken from refrigerator and preheat oven to 350 degrees F. Bake, covered for 30 minutes. Remove foil, turn pieces and cook for another 30-45 minutes until chicken is well-browned and cooked through.

Remove chicken to serving platter. Defat juices from the pan and spoon over chicken.
