Easy Chicken Tomato Skillet

- non-stick cooking spray
- 1 pound chicken breasts, boneless & skinless
- 1 can (28 ounce size) diced tomatoes with basil, garlic and oregano
- 1/2 cup water
- 1/2 teaspoon salt
- 1 1/2 cup long-grain rice, uncooked
- 2 zucchini, quartered lengthwise and thinly sliced
- 2 teaspoons dried basil
- 1/2 cup Parmesan cheese
- salt and ground black pepper, to taste
Spray a 12-inch nonstick skillet or Dutch oven with cooking spray. Cut chicken breasts into 1/2-inch chunks. Add to skillet and cook over medium-high heat 3 to 5 minutes or until lightly browned. Add tomatoes, water, salt and rice; mix well. Bring to a boil. Reduce heat, cover tightly, and simmer 10 minutes. Stir in zucchini and basil. Cover; cook 15 minutes or until rice is tender. Remove from heat. Blend in cheese. Season with salt and pepper to taste.
