Colonial Rose Inn Lemon Chiffon Mousse

***MERINGUE ***
- 3 large egg whites
- 1 1/2 cup powdered sugar
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon lemon juice
***FLAVORED WHIPPED CREAM ***
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 2 lemons, zested and juiced
Whip egg whites, cream of tartar, and lemon juice to soft peaks. Add sugar and whip to stiff peaks. Set aside. FLAVORED WHIPPED CREAM: Combine all ingredients. Whip until stiff. Fold the meringue mixture and the whipped cream mixture together and pipe or spoon into a glass. Garnish with a bit of regular whipped cream and a sprig of fresh mint. Chill until serving.
