1 lb small fresh shrimp, peeled, deveined and tails removed
4 tablespoons corn starch
2 eggs beaten
1/4 cup water
1 cup cracker meal*
1 teaspoon garlic pd
1 teaspoon creole seasoning
1 teaspoon brown sugar
1/3 cup flour
1 1/2 teaspoons tabasco sauce
1/2 teaspoon paprika
Marinate the shrimp in garlic, sugar and tabasco for 1/2 hour in the fridge
Beat the eggs with water and set aside
mix the flour, cracker meal, paprika, creole seasoning.
Dip shrimp into corn starch and shake gently to remove excess.
Dip shrimp into eggs.
Dip shrimp into bread crumb mixture. Make sure the crumbs stick to the shrimp
Place on a rack.
Refrigerate for 30 minutes, if you have time.
Pour oil into a deep-frying pan or deep-fat fryer.
Heat oil until it reaches 375 degrees F. Test with a deep-frying thermometer.
Place a few shrimp at a time in hot oil.
Cook until the coating has turned golden brown and the shrimp are opaque inside. Will float on top of oil
Use tongs to remove shrimp from oil
Allow to drain on paper towels.
*Can make own cracker meal in food processor with saltines or putting in zip lock bag and crushing with a rolling pin.
