1 large butternut squash peeled, seeded and cut into 1/2 inch pieces
1 cup apple cider
1/4 teaspoon salt
3 tablespoon unsalted butter
2 tablespoons honey
1/4 teaspoon curry powder

In a non stick skillet, add squash, cider and salt. Heat to boiling. Cook covered 10 or 12 minutes or until squash is tender and liquid thickens.

Stir in butter, honey and curry powder. Add
some black pepper and more salt to taste.
Makes about 2 1/2 cups
